Choice or prime?** A: I believe they opt, you should ask them, not to have grading performed. They pass the savings on, I suppose, to the consumer. What I have received I would consider to be predominately at the upper end of the "choice" grade with "prime" in the mix. All the beef is well marbled. "Higher Choice" (not an official grade) is a term I have heard cutters use and I would apply All I can really attest to is that it is the most flavorful of any that I have found available excepting some Irish beef I've experienced. You can buy Waygu (Kobe) but, the texture of the Japanese beeves isn't acceptable to me so I can't speak to that product.Nebraska Star Beef vends.
