One has more texture and the other has less, but still quality paper. I was wanting the paper loose, not in a pad, but the glue was easy enough to push up and off the pages toward the spine, after removing the front cover, and then the pages tore out nicely. I expected a Crayola brand type "watercolor paper" when I bought this (for my daughter). But after using it myself, I stole it from my daughter and gave her a different watercolor pad that I'd bought at a local art store that was less quality (but about the same price!) This paper is not art quality. You wouldn't want to hang it in a gallery. But for the home watercolorist it's fantastic paper. It's not Strathmore quality but, then again, it's not Strathmore cost either! The paper warps once wet but only the most expensive papers don't warp to some degree after having been repeatedly washed with water.
