Wusthof santokus are at 15 degrees straight from the factory, so if you use this it will make the blade LESS sharp than factory edges, but the knife WILL be useful at the time you need it. This IS a great useful temporary, tool, just use it as intended and don't assume it's a long term solution., and worse, over time it will reprofile the knife permanently. But if you use it a few times over the knifes life in an emergency there wont be any damage done because the next time you do a real sharpening, it will bring it back to normal.But please understand what this is.This is not meant to be your only knife sharpening solution.This is your portable, quick and easy emergency sharpenerIt is NOT meant to replace real sharpening on stones or by a pro sharpener.These are very rough on knives.
