A: Re sharpening....

1...periodically use a steel honing rod
2...after much use, a whetstone will bring back the edge

The sides are each 8-12 degrees and the total angle is cumulative.

A: Thank you for your question, it's about 4 oz. The weight displayed on the page is the package weight.

**Q: Are these knives made in china?**
A: Probably made in China with Vg10 steel. The map of Japan with the description of VG10 steel is, in my opinion, misleading.

**Q: Where are these knives made?**
A: Very hard to find this information, but they appear to be assembled in China with Japanese steel.
