It is also used as a tenderizer in the crust of baked Cantonese moon cakes, and in lye-water "zongzi" (glutenous rice dumplings wrapped in bamboo leaves), in chewy southern Chinese noodles popular in Hong Kong and southern China, and in Japanese ramen. Review: KanSui for Noodles - Chinese noodles are not the same as spaghetti. The only difference is that the dough needs to be mixed with alkali salt solution called "Kan Sui" by the Chinese and Japanese. This solution is for that purpose. Handle with care as it is dangerous alkali solution but very necessary for noodle making, I am glad it is available to buy on desertcart.
