## Description

The Bayou Classic 2.5-gallon Bayou Fryer heats from the inside out, not from the bottom. The back mounted jet burner blasts hot air horizontally through hollow inner tubing that is immersed in cooking oil. Heat transfers from the metal tubing into the center of the oil to keep batter from scorching while in use. This design enables you to re-use your oil many times and reduces cost.Basket Size-7.5 x 11 x 3.5 inches.It is a free standing unit that comes with 2 sets of legs that bring the unit to waist level or down to a table top unit. The bayou fryer also has a built in drain, a large thermometer and a 10 PSI regulator with control valve and stainless braided hose.Includes a preset high pressure regulator assembly with stainless-steel braided hose.

**Q: Do you sell a cart with wheels to go with this size**
A: They do sell a cart. I don't know if they are available thru amazon but I have one. I got this fryer for Christmas last year. I told my girlfriend not to get me anything this year cause it won't top this.

**Q: Will the 2.5 gallon cook a 14 pound turkey or will a 4.0 gallon?**
A: NO, these are not for frying turkeys.

**Q: What's the max temperature it can reach?**
A: It does not have a thermostat so it will continue to heat the oil until it reaches the flash point unless the lp gas flame is turned down.

**Q: Can it be used without the basket?**
A: We do not recommend using this without the basket.
