I add 1/2 teaspoon of this Citric Acid (sour salt) per loaf. I noticed some of the store bought sourdough bread lists vinegar on the ingredients, which I tried, but we like this better. I was confused when I ordered it, thinking it was Ascorbic Acid, which I was going to try adding for freshness as recommended in bread recipes. The mistake turned out to be a good one! The seller also included a seasoning gift, which was nice.
