    Superior non-stick performance will feed creativity

When a new, heavy duty, relatively expensive "non-stick" metal pan stops performing after a couple of months with weekly use, it is time to try silicone. First for the non-stick METAL pan, initial performance was excellent--hot muffins released easily and without any help.  Now? Help in the form of a knife around the edges is required.... and the pan was cared for meticulously --never put in the dish washer and hand washed.I am not a new comer to silicone surfaces.  I have a Silpat which is used for candy, and I love it.  I also have a silicone bread pan which I use only occasionally.  Muffin pans I use at least weekly.  And, those muffins need to come out whole so I can eat them all week long...  So how does this silicone pan perform?  Muffins release very easily and whole whether warm or cold.  Add the fact that blueberry and/or raspberry muffins often present additional challenge in the critical performance release (berries get sticky and more liquid as they cook)-- muffins still pop out!  If the muffin is overflowing the edge?  Still no issues.  How bout hot caramelized sugar from a melting topping?  No sticking.  In short, as with Silpat, silicon is the magic material that can take the heat--not add any flavor or decompose--and still perform great. I bet you could make custard or individual bread puddings (very wet!) and this type of pan would do great.  You might get cooking ideas you never thought about with a pan like this... mac and cheese?  Mini meat loaves?  Candy?  Things you would never try with a sticky metal pan.... If you have kids that want to touch everything--like hot pans--the added benefit is that these pans are much cooler to the touch even straight out of the oven then metal.  (Silicone conducts less heat then metal?).  That is not to say that you do not need a pot holder right out of the oven, but the pan goes from hot to warm pretty quickly.If there is anything to not like about silicone it is the flexibility and lack of rigidity.  Metal pans are easy to handle, never losing shape.  Silicon is is more of an issue, especially when putting things in the oven--hands need to be on opposite sides to avoid spillage.  Removal from the oven is less of an issue. To make things easier, I heat up a cookie sheet during the oven preheat then move the hot pan over to my work area for trouble free transfer of the silicone pan to the oven on the hot cookie sheet.This product is highly recommended and getting lots of use.  If performance changes this review will be updated.

    Meaty muffins!

I realized when I went looking for my cooking stuff, my muffin tray is gone, so I came looking to replace it and realized 2 years later, I had never left a review.  Full disclosure, I never used this to actually make cupcakes.  I purchased it because I am obsessed with food in the shape of muffins.  I've tried a bunch, many have been an epic fail, but I love making meatloaf muffins- they are perfect for lunches and easy to portion.  But this is not about the food.  Obviously I was satisfied if I came looking for another set.  For me the only drag was they were pretty difficult to clean.  Like I said, I never made actually cupcakes or regular muffins- I always made come sort of meat based muffin and that baked on pretty good.  I would have to use some elbow grease to really get each cup clean.  Maybe not a problem if you're making cakes.  However it is still not something I would even attempt in a regular baking pan, and using those cupcake lines seems so weird when I was baking meatloaf.  All in all a good product that I would still be using if the moving gremlins hadn't stolen it!

I had a standard non-stick metal pan that I wanted to replace. It had left teflon paint (EGAD!) on my food, and I was hunting for a replacement and came across this little gem.The pan works well. The instructions say to coat the pan with oil, as you would for a standard pan when using it. This is my first silicone pan, so I didn't know what to expect with regard to releasing the food. So far I have just used it for cooking breakfast egg cups, which released about the same out of this silicone pan as they did out of my old teflon pan. The HUGE BONUS for me is that I now don't have to worry about any horrid paint chips in my food!The pan seems high quality, and I would definitely buy another. I have read reviews on other silicone pans about there being problems with fillers, etc. This pan seems to have no fillers, and to be just high quality silicone. I'm quite pleased, and will probably buy more from this company in the future.Some reviewers have mentioned concerns about transporting this pan when full of batter, due to the fact that (though heavy duty) it is not as rigid as metal. I solved this problem by placing the silicone pan on an upside-down cooling rack and filling it/transporting it/placing it on my oven's rack. It slid right in and the cooling rack doesn't in any way obstruct the heat. Easy!
