I went through quite a few cook books and innumerable online recipes before at last finding true love in this book, which not only produces perfect recipes every time, they are also far healthier, with much less starch, and fat, and NO baking mix; each recipe calls for its own unique blend of flours.These recipes are so well constructed, I can easily substitute certain flours here and there if I feel like it, and since I cannot tolerate Xanthem Gum, I use Physillium Husk Powder, and it works just fine. I also cannot tolerate Sorghum flour, so I replace it with a little teff flour and more of the other flours called for. When making muffins, I always substitute 1/4 cup of the White Rice Flour with Millet flour, which makes muffins fluffier. I can also severely cut down on the sugar, replacing its bulk with Sweet Rice Flour and adding more sweetness with a few drops of liquid Stevia.Point is, I can work with this book, just pull it out and get going without worrying about buying pre-mixed flour blends or making my own, and I get delicious results EVERY SINGLE TIME. It's obvious these are recipes he and his wife and kids really eat and enjoy on a regular basis. It was to die for and I will definitely be making it again as well as trying out other recipes. This cookbook is definitely a keeper, and very easy to understand in order to make something the first time taste fabulous! Great for novice cooks as well as well -trained cooks like myself.
