Review: Whippy, Sharp and Light; Established Pro Sandwhich Workhorse - This bread and tomato knife is the new darling of our kitchen at the great bar I work at in Las Vegas. I've had it for over two weeks and any positive review here is solid; this knife has seen a ton of action in a professional kitchen with impressive results. There are three extremely important details about this bread blade that you will either love or hate. It's the chopped liver of knives. --It is whisper light, the polar opposite of heavy and weighs a scosh more than a hummingbird wing (alright, hyperbole aside, three wings). --It is remarkably sharp. --It is the Webster Dictionary default definition of "whippy". This crazy knife is like those cartoon saw blades that are all flimsy and bend with a slight breeze but still able to return to its original form. Now, this does not mean it's like wire that bends and holds it's curve, no, this saw-toothed cutter bounces back. It is so, so BENDY, but you will either love it to death or murder it with a refund. If you want a bread knife that has easily seen two hundred various sandwiches and more without any signs of losing its cutting prowess and a lightweight almost kiddy straw of a blade, scoop this one up and ditch the coffee for three or four days. I'll close this soliloquy with full transparency and some advice to folks who may be new to a pro kitchen: even when you hold your knife properly when walking with and calling out "knife" and "corner" and all that, remember most outside people who periodically come out to fix equipment have absolutely zero understanding of the kitchen. This Knife cut the flexor or palm side of my middle finger between the first and second knuckles. To the bone. With an hour left of service. By a guy fixing the soda carbonation. Not his, my or the knife's fault, crap just happens and you move on, hopefully with no added iron in the poke.
Review: This bread knife delivers : Biggest Bang for the Buck. - 7 year review: This knife lived through the mad Covid years, attacking tirelessly an endless line of beautifully crafted sourdough loaves, sometimes 4 loaves in a week!. This lightweight, sleek, sharp, easy to use, ultra functional and very very beautiful knife is a prized possession …. It deserves a pedestal in MoMA. Below is my original review written 7 years ago: Absolutely wonderful knife. Perfect match for a very difficult to slice bread. No knead 1.5 kg loaf! The bread is difficult to cut because not only it is massive but it also has an impossibly fine "glass" covering on top and an extra thick crunchy crust at the bottom. I have used several expensive knives to cut this bread and have been frustrated because the slices I obtained were hack jobs at best. Glass destroyed, middles pulled and bottom crust deshaped beyond salvage. This knife, does a perfect job of delivering consistently uniform slices - effortlessly. The sharp serrated edge leaves hardly any crumbs from the glass, slides through the vast middle and finishes the bottom crust with a calligraphic flourish. The mesmerizing action is amazing, very effective and highly satisfying. 6 MONTHS ON: After perfectly slicing 20 loaves This Tojiro is going strong. To have it ready for the job, respect the knife as you would a fine instrument. To keep the knife (and fingers) safe in the drawer of less frequently used implements, I have reused the flimsy container after reinforcing critical corners with small pieces of heavy duct tape on the outside, and sticking a piece of folded aluminum foil where the knife point would touch in the inside. The store hanging tab now works as a handy pull tab to slide the knife compartment out of the clear sleeve.

## Questions & Answers

**Q: Does this have a real wood handle?**
A: Yes, it has a real wood handle. Mine was slightly discolored on one side but that does not affect the purpose of this knife.

**Q: What is the size of the blade? (Length x Width)**
A: The length is 9 7/8 inch. Width of blade is 15/16 inch. Best bread knife I have ever used..

**Q: Is the knife fake if it does not say tojiro on it ?**
A: Bought mine January 7 2017 and it says both Tojiro and Made in Japan on it (as well as having Japanese(?) characters. My other Tojiro knives also have the same Tojiro and Made in Japan markings. Not sure why they would change it.

**Q: Does it have a storage box or case for when it is not in use?**
A: I have reinforced the thin case with some duct tape at the short edges of the cardboard box. It has worked like a charm. Proper storage is very important especially for serrated blades.

### ⭐⭐⭐⭐⭐ Precision cutting
*by A***R on December 29, 2025*

Man, this knife is so sharp! Way better than our old bread knife. While cutting I looked into the very soul of our bread. I tore through the very fabric of reality, staring at the void, as the void stared back at me…and then I just put some butter on my thinly sliced sourdough and went back to watching tv. 8/10 would recommend (would give ten stars, but the whole void thing, you know)
