Using less oil will keep the thermostat constantly cycling on and off since less oil provides less of the heat-sink effect and may cause food to cook at too high a temperature. I filter my oil using a "de laminated" paper towel lining a tea strainer placed over a catch pot and discard oil once it becomes darkened - usually 3 - 5 uses (depending how much food is cooked each time). Hope this helps... PS: If you have a bad stomach, do not use cheap oil.
