Agostino RECCA Whole Anchovies in Salt Imported Italian Anchovies Agostino Recca, from Sciacca, Sicily, has become one of the most reliable producers of anchovies now being imported into the United States. The Recca family is not a stranger to quality, flavor and tradition. These Recca Anchovies from Sicily are whole salted fillets packed in salt and a touch of brine. It is also important to note that these anchovies do require some extra work to remove the backbone and tail, but the extra work and time to soak the de-boned anchovies in cold water for 15-20 minutes before using, yields a flavor out of this world and we have actually found they are less salty than the oil packed anchovies. We recommend that once the can is opened, to keep the remainder of anchovies and salt in an airtight container in the refrigerator where they will keep indefinitely.

Review: Nice, plump salt-packed anchovies in a resealable plastic tub! - First of all, let's get this straight - these are SALT-PACKED WHOLE ANCHOVIES - exactly as the name says, these are anchovies packed in salt. They are whole (except for the head and guts) - which means that they have bones and skin. They are packed in salt - if you try to eat them straight out of the plastic tub, it's going to be like sucking on a salt-shaker. A salt-shaker with bones. But, if you take the time to prepare them, they add tons and tons of flavor to what you may be cooking. What I like to do is take an anchovy out of the tub (the resealable plastic tub is far better than the metal can that they used to come in), scraping off and leaving in the tub as much salt as I can. Then, under cold running water, I strip the filets off by running my thumbnail down the spine from the neck opening to the tail. Rinse each filet, and they're ready to use. Some people/recipes will soak the filets in oil, water, milk to reduce the saltiness and fishiness even further, but I usually just use them as-is. Wonderful cooked into a pasta sauce (saute in olive oil until they fall apart), put on pizza, added to a caesar salad dressing, or even on cold thickly buttered toast. Yum! The only brand that I've been able to find locally after much searching is this Agostino Recca brand, and they've always been delicious. These from desertcart are no exception!

Delicious, and stable in salt in the refrigerator for years. The second can found the fish to be swimming in a brine solution, disintegrating and inedible. The third can, ordered in hope that this was a one-off problem, and in happy memory of the first can from years ago, arrived with fish swimming in a soupy salt solution. Not so bad as can two, but hardly edible. At $20 per can my interest in continuing to gamble is gone.

**Q: how many anchovies are in the container?**
A: I have never actually counted the number but the container stipulates that 75 percent of the 800 gram weight is actual fish and the rest is the salt they are packed in. If I were to guess based on our consumption..I would say there are approximately 45 anchovies. Each time my wife prepares a batch in olive oil and hot peppers ..there are at least 12-15 anchovies. She makes at least three batches from each can. Keep in mind that these are bigger than the De-boned anchovies you see in the small glass jar in the super market. Hope this information is helpful.

**Q: once the can is opened how fast do you need to use up the anchovies?**
A: Transfer to a glass container (once open, the can may impart a "tinny" taste), keep the anchovies covered in salt. My last tin lasted more than a year.

**Q: Looking for “anchovies cured in salt, kept in olive oil.” Have I found them? Are all anchovies cured in salt?**
A: These anchovies are cured and packed in salt. they are not filleted.

**Q: Mine came with a good amount of liquid. Is that normal? When storing these in glass for later, should I drain the liquid?**
A: Sometimes the salt has liquified a bit.   I store them in the tin, covered with plastic wrap, so as not to fool around with the salt until I want to use them.  Then I soak them briefly in milk.   If you are going to move the entire can to a glass container, I'd keep the liquid.     The best Italian delis store the unopened cans in the fridge so the salt stays thick.
