Because it's supposed to be. That's what makes it a country ham...and delicious! Perfect for breakfast. Try it on a biscuit with some apple butter and cheddar cheese. I guess it's fair to call it an acquired taste, I just acquired it at a very early age. They told me I could learn to like it as it is a delicacy and that it wins awards. If you like this delicacy go for it. If it's a first try really evaluate what you're looking for. You will be stuck if you don't like it. It's too much money to spend on something to throw in the garbage. I'd never ever do this again and we really like Virginia baked ham.
