If you are looking for intense, peppery or aromatic fresh-pressed olive taste then this oil will definitely disappoint. However, that being said, this is a low acidity olive oil, definitely has plenty of flavor in my opinion. For your average American palate this will be perfect. I could taste some fruit notes and nice flavors using this in my salad this evening, I enjoyed it very much; the oil definitely made the salad. My only critique is that I wish that the oil was fresher. My lot was pressed almost exactly a year ago, which I am aware is perfectly acceptable by safety/quality standards. I can imagine the difficulties of distributing ultra-fresh olive oil to the world and so I write this last bit to encourage everyone who may read it to SUPPORT FARMS LIKE THIS by buying ALL of your olive oil from real people and traditional farmers who do it right! Soon we'll all be guzzling fresh "olive juice" pressed weeks ago! So to sum it up: kudos to Ozelia for great olive oil and top-notch customer service! I don't even like the taste of extra virgin olive oil too much. But using it for the health benefits. I don't use in for cooking with heat since extra virgin olive oil has a low smoke point, but I like it in salads.What I'm usually looking for is extra virgin oil of a single origin (ideally Grease) that is cold pressed and unfiltered. This one fits the description. Tastes good (for an oil :D), has very nice and dark bottle for storage.
