**Q: I’m confused on the directions. I need one cup of tamarind juice for pad Thai, anyone know how many teaspoons for that?**
A: Here's what I would do...Take two generous tablespoons and mix in a cup of hot or warm water.  That should do it.  I love this, our son is a chef and he uses it all the time.  Another great one is pomegranate molasses.

**Q: how long does it last once opened in the refrigerator**
A: I opened ours many years ago and it is just fine. We only use a teaspoon at a time so it will take a long time to be used up.

**Q: what are the ingredients?**
A: The label reads tamarind extract.  I used all of it and am trying another brand at the moment.  This is very concentrated.

**Q: is this tamicon or tamcon.    with or without and "i" ?**

Long ago, my roommate's mother taught me her secrets for flavoring pinto beans to mash up and use in burritos, or whatever. The first is milk and the second is tamarind paste. Of course, knowing how to remove the wind from the beans and achieve optimum softness is also important. I cook by taste, so I add small amounts of this until things taste "right." If you put too much, your beans will be sweet and a bit strange. I have not yet tried, but this paste would also help to create caribbean jerk sauce. The tamarind flavor is unique and not often found in Murcan food, so try it out.

I used to be able to buy this product from The Spice House, but they have stopped carrying it. I was glad to find it on Amazon as we have no Middle Eastern or Indian food stores near our town. I was a little surprised at the smaller size (smaller than I was getting from TSH anyway) but I prefer the smaller size. A little of this stuff goes a long way. While it takes forever to go bad, I don't like keeping ingredients long (or throwing them out.)This tamarind paste is about the thickness of a heavy honey and has had all the seeds strained out. It's easy to measure, easy to use, and has a nice tart-tangy flavor. It's a bit expensive -- I paid less for the larger jar -- but the free shipping )on qualifying orders) takes a bit of the sting out.
