This type of pasta is often referred to as bronze cut and it is dull because of the way it was cut, not the ingredients. The advantage of this is that when the pasta is cooked it's surface is a little textured and so the sauces cling to it well. Many of the pastas that you buy at your local supermarket look smooth in the box and when cooked don't properly hold the sauce. Having said that, if you can find good quality pasta in your local grocery store it might be the better option since it is probably a bit cheaper. Our local store used to carry a good pasta but, probably because it was a little more expensive, dropped it.
