Review: Highest Quality I've Ever Had - I recently decided to transition myself to a more Mediterranean type of diet. Naturally, I began by searching for a high quality extra virgin olive oil. Let me say first that I am NOT an olive oil connoisseur. I've always used olive oil in my salads and to cook with, but never payed attention to quality. I needed to do some reading about what to look for in a quality olive oil. I learned it's the polyphenols (antioxidants) that give extra virgin olive oil one of it's main health benefits. Polyphenols give olive oil the 'bite' you feel it in the back of your throat. These polyphenols are sensitive to light and time. Fresher olive oil is better and light protection is a must. That led me to PJ Kabos. I read the reviews for this olive oil here on desertcart and decided to give it a try. The oil arrived in an opaque container and the pour spout is fabulous. No dripping and pours nice. All of that is appreciated, however, even my untrained senses couldn't believe how fresh the aroma is of this olive oil and the incredible taste. It has that polyphenol bite in your throat, too! Exactly the quality I was looking for in an olive oil. I mix it with a bit of balsamic vinegar, salt, pepper for a delightful dressing on my greens. It's also divine on Caprese salad! This will be my go-to brand moving forward. I'm looking to try their Family Reserve olive oil next.
Review: BUY THE TIN! - If you buy PJ KABOS Extra Virgin Olive OIl from desertcart in the tin, you’ll save money. When I ordered a 16.9oz tin of PJ KABOS Medium, it was $11 cheaper for the same amount of oil in a bottle! I was concerned the tin might be tricky to open and messy to pour. There’s an illustration in the FAQ section of the PJ KABOS website that answers the question, “How do I open the tin of PJ KABOS Extra Virgin Olive Oil?” I used a small flathead screwdriver to start the lift of the edge of the ring that breaks the seal, the spout popped out with a gentle pull. My first pour from the full can was 1 Tablespoon measured into a small shot glass. There wasn’t a drop of oil anywhere but in the intended glass! The spout has a screw top so there's no need to transfer the oil into another container after opening. The tin was packed in a corrugated cardboard box inside of another corrugated box so it arrived in pristine condition. The harvest dates and best by dates were as stated on desertcart. The oil is grassy, peppery and bitter, which is what you’d expect for high polyphenol extra virgin olive oil… or so I’m told!

My name is James from PJ KABOS and I would like to thank you for your interest in our product!
We always filter our Extra Virgin Olive Oil, please let me explain why: Although an Extra Virgin Olive Oil being unfiltered sounds very special (and good for marketing), there is another, very important side to it...
Don't get me wrong, nothing is better for me than tasting freshly extracted Extra Virgin Olive Oil at the mill that has a cloudy green color, possibly combining this with warm fresh made bread...Yum! However, past this point, if an Extra Virgin Olive Oil stays unfiltered, this greatly reduces its shelf life as Extra Virgin Olive Oil. It is my experience (and according to other studies) that even after just a couple months, it starts developing tasting defects (one of those to be muddy sediment). And if an oil has even a small tasting defect it is no more considered to be in the Extra Virgin category. It is then demoted to the Virgin Olive Oil category. Additionally, if an olive oil is unfiltered its smoke point is greatly reduced compared to if the same oil was filtered (and would then have a lower humidity content). 
Also, very importantly, if an oil is unfiltered the chances increase for something unwanted to pass on into the bottle the final consumer will purchase (I will not mention what these might be). So by filtering you might lose just a very small fraction of taste and aroma at the very beginning (not noticeable to most in a blind taste-test) but the quality gains are much more substantial.
It is actually much easier and cheaper for us to leave the oil unfiltered, since like this no further work is involved not to mention the actual oil quantities we lose in the filters. But we are not looking for the easy or cheap way. Our up most concern is to achieve the highest possible quality for the maximum amount of time and all our actions at PJ KABOS have this as our only target. By the way, the filters used are suitable, simple paper filters, absolutely no chemicals involved, and we always use new filters every time.
