The key is after you dip it in the egg/milk or water mixture and flour the seafood with the mix - allow the breaded fish/shrimp/clams to rest for at least 30mins. It will look like you need to re-bread it but, DON'T you want the breading mix to look transulent. Fry in a hot deep fryer or fry pan with 1" of oil.
