The Lion Sebatier. And all these years later still have them. I looked at my steak knife sets that seemed overpriced or just lacked the certain"je ne sais quoi". Then I thought... let's check what Sebatier have been doing since we last met.. and Wala!Love these knives. Pulled two of them out of the box and gave a close examination. Beautiful. So I ordered the same box set of new kitchen knives.Sebatier is the pinnacle of French Steel. And in my humble opinion the most undervalued knives on the market.And that I am happy for. Back in 2006, I parted with $1500 for a beautiful set of Shun Ken Onion knives that look like they belong on a Klingon battle cruiser. They are no longer made and I feel like not using them. I can't trust any one else with using them either. The last girlfriend that tried almost amputated her own finger, dropped the Santoku, and bent the blade.
