It's better than any knife that any restaurant provides.In it's younger years it keeps the edge very well and even After 5 years of very hard work, it cuts amazing. This is one of the best knives I've ever had and Unfortunately mine has either been stolen or lost. And I wish I could have it back. Because it has made me and my cooking career.And has been a tool That I rely on the most.I hope that they will make more of these knives. Because I'll be first in line to buy one
