## Description

The Global 7" Hollow Ground Santoku Knife is a great alternative to the chef's knife. Great for cutting, chopping and mincing vegetables. The scalloped blade has a straighter edge than a chef's knife and has a blunted sheepsfoot-tip blade with a thinner spine. It can easily slice thin-boned and boneless meats, fish and vegetables.

Review: Great knife but needs maintenance - If I'm being harsh and picky, I would give this a 4.5 star. However compared to all the knives available on the market it is fair to give this a 5 stars. I got interested in this knife I saw some reviews on external sites claiming they have never needed to use a sharpening stone on this knife for years. I've purchased this as my primary knife but after a few months I've needed to sharpen it as it was not slicing tomato skin with one smooth forward slice. Proper honing with a ceramic rod was applied a few times weekly during this. So it's definitely a good sharp knife but if you were looking for a primary knife that do not need to touch the stone for a long time this is not it. That said, the cutting is an absolute breeze while it is in proper shape. Very smooth and clean. Amazing for dicing vegetables. It just needs frequent honing, it gets quite noticeable when it gets tiny bit more dull.

**Q: Are these knives dishwasher safe?**
A: According to Global website, they say "Please do not put GLOBAL knives in a dishwasher. The harsh environment during the wash cycle will harm the knife and in turn, cause corrosion."

**Q: What is the difference between the various Global Santoku knife models?**
A: Mostly length and curvature of the blade. They’re all great knives though — own 5 and have every intention of continuing to buy these when those wear out. Incredibly sharp. My father-in-law, who is a surgeon, swears these are sharp enough for surgery.

**Q: Is this 11" or 14" long? confused by description. i need the shorter one so g48 or g80? thanks y'all!**
A: The blade is 7 inches, the overall knife including the handle is 14 inches. G48 seems to have same dimensions.
