I stirred up my first batch of these pancakes and let the batter sit, as recommended on the package. They did get fairly thick, so I did water it down a little, based on my personal tastes. They cooked up quickly on a cast iron griddle. Before I added a sugar free syrup, I some of it a taste with nothing else on it. The flavor is good and the texture is reminiscent of wheat flour pancakes, just thicker than I like. I preferred my pancakes to be almost crepe-like thin. But if I can eat these and keep my blood sugar in check, I can get accustomed to having thicker pancakes.Pour on the sugar free syrup and enjoy a stack of pancakes. These are the magic key to being able to eat pancakes on weekends and being able to enjoy them.
