ALSO CALLED Panagarkandu, panangkarkandu, panankarkandu, panagalkandu, panamkalkandam, panamkalkkandam, panankalkandu, kalkkandam, பனங்கற்கண்டு (Tamil Nadu); tati kalakanda, patika bellam (Telugu); kal sakre (Kannada); tadi mishri, talmichri, talmishri, daga mishri, misiri, kalakand mishri, ताड़ की मिश्री (Bengal and north India). WHAT ARRIVES Loose crystals, not a fine powder or even cubes. Piece size varies, colour runs pale gold to amber, sweetness is mild rather than sharp. HOW PEOPLE USE IT In tea, coffee, milk or kadha, where it dissolves in hot liquid. In halwa, payasam, kheer, desserts, milkshakes, yogurt and baking. Many chew a crystal on its own, or keep it for pooja and prasad.
