The blade changes from 0-1cm with ease and the sliding guide is very safe. Its easy to take the blade off to wash you just twist it and it folds for storage. **Q: Is there a noticeable difference between speeds? It's mainly made from plastic so there is a bit of flexing when cutting. I've used it to cut ham joints and blocks of cheese which it does a reasonable job at slicing. The biggest problem is with cleaning, little pieces of meat get stuck in the machine and need to be removed with a toothpick or similar implement.
