I want to use it as a ph balance** A: Vinegar is acetic acid. You won't be able to convert citric acid to vinegar, but you can use it as a substitute for vinegar. Do a Google search for "substitute citric acid for vinegar." You'll find a lot of results. **Q: Can this be used in making summer sausage? / how many tsp per lb?** A: Yes. 3 oz. for 25 lbs. of meat or 1 level teaspoon per pound of meat. **Q: Can I eat this straight from the bag?** A: I wouldn't recommend eating it straight out of the bag. It's intended to be added to foods to make them more acidic and is used primarily in canning. Foods that are only slightly acidic or are not at all acidic need an acidifier added prior to water bath or pressure canning to help prevent spoilage or organisms like botulism from growing in the jars. If you just want to have something acidic, I suppose you could add a 1/4 tsp. to a quart of water and drink it. I've never tried using it for anything other than canning. **Q: Can this type of citric acid be used to clean a countertop water distiller?** A: I use it to clean my hot pot, coffee pot. I also use it to clean glass shower doors. For my 12 cup coffee pot I dilute it 3 teaspons to the 12 cups. Run it thru and then run it thru with plain water. I don't know what mechanism the water will go thru but I would assume, it would be like a coffee pot. I saw a video on YouTube to turn off the water to the toilet, empty the tank fully, pour 1 cup of Citric Acid into the tank and fill with HOT tap water from a bucket. Stir and let sit for 30 minutes. The results are incredible. Works better than bleach, Vinegar, Hydrogen Peroxide and it won't deteriorate the rubber seals. I did this in Oct '25 and my tank has stayed clean through April '26 and I hardly ever have to scrub the toilet anymore.
