They have flat bottoms which are essential on a flat ceramic cook top. You really do cook in less time, using less water and heat. However, they are very hard to season*** and I had to try two different methods. Adding more oil than normal at the beginning of cooking, heating that and then adding the food works very well.***NOTE that I am using the word "season" because that word was used in the manufacturers instructions on what to do when the pans are brand new.I have not tried the really expensive "waterless" 5 or 7 layer stainless pans, but for the price I think these Viking pans are excellent if you are willing to take the extra time to initially season them, plus the extra time it takes each time you wash and dry them to keep them looking nice and shiny.If you have been using non stick cookware for several years as I did be prepared to learn how to cook all over again. Once you do, you will be very pleased with the pans and know that you are no longer eating chemical coating with your food. ### ⭐⭐⭐⭐⭐ Perfection in Stainless Steel *by S***C on June 20, 2014* We cook every day at our house ,so we need practicality and quality. Viking pans have both. Ultimately, it was the comfortable handles that sold us on Viking… over AC's pain inducing handles. This pan is heavy but well balanced and easy to grip. Because the Viking pans have flat bottoms , they work really well on our ceramic top stove. They also clean up beautifully with a non scratch stainless steel scrubber.We are gradually replacing our 35 year old copper clad Revere Ware pans with Viking and we couldn't be happier!The 2 quart sauce pan is our 4th Viking pan. ### ⭐⭐⭐⭐⭐ Viking makes the best cookware *by D***R on April 26, 2014* It's heavy, it will last forever. I have a gas stove and love Viking cookware, I think it's better than All-Clad and if you cook a lot, I would recommend you try at least one piece.
