Metal will scratch the surface. Use medium and lower heat when cooking. **Q: The instructions say to season by rubbing with oil and wiping away the excess, but do I need to heat the pan to season it? If so, for how long?** A: I'm not much help, I missed that part of the instructions. So I never 'seasoned' mine and it works fine. Usually with a cast iron skillet, you have to cook the 'seasoning' on. It is nice and heavy, it gets very hot evenly. And food doesn't stick so it cooks and cleans up nicely. I ended up buying another one in a smaller size. I believe the lost you can hope for in non stick is a year or two. These pans are the best version of the disposable pan. They do great as long as you wash with a soft brush and don’t hit a hot pan with cold water (they warp fast and badly). So why do I like them if they break? Because so do the expensive ones. But these are cheap, feel like a nice expensive pan and last just as long.
