Take your average tri-tip or petite sirloin-- thicker the better, salt and garlic one side & garlic the other (when the first is cooking). Seer both sides in 350 degree F veg oil for 3-to-4 minutes (thickness determines) and you end up with a crusty, savory, delicious piece of meat after you let it rest. A little practice and you can work your magic on most any piece of red or "other white meat." Get one of these, you'll thank yourself. As for clean up-- I just hot water/soap & brush before I toss it in the top rack of the dishwasher. Please be careful when inspecting the points (puling back the guard-- this thing is designed to stab meat, like your finger-- doh!)! Thanks JayDoll. A few observations:-The tool is top rack dishwasher safe, but it retains water in the black handle, so you will need to shake it out-I had a bit of a problem with some cold flat iron steaks. The knives would go in, but had a hard time retracting with the spring mechanism. They wouldn't let go. I had to pry the tool off the meat with a fork. After a few stabs the meat was soft enough to retract the tool automatically.
