The Kuhn Rikon knives are great because they are decent quality, hold their edge well, and if you do happen to destroy it, it doesn't cost much at all to replace it. I've been using mine for about a month now and it's great. My parents have had a few of these for almost a year and they use them nearly every day and the edge still holds well.
