This is only natural, for just how many people do this? Well you did. And you will wait for them to come with skepticism, thoughts coming up in your mind about how you could have gotten just as good a deal, if not better, at Costco, Trader Joe's, or some boutique little import market. And so you get tired of waiting for them. Your shelves become stocked with cans and cans of assorted sardines from various countries, some handcrafted, that you've spent a small fortune on, because you couldn't wait for that exceptionally fine sardine. You've sampled quite a few, and you think you've had the best. So when your purchase finally does arrive, heavy, like a packaged bomb, it takes a second for you to remember what this could possibly be, and then you do remember, and you wonder if you've wasted your money. They are wrapped tightly in plastic. You take out your bone handled efficiency knife made of Damascus steel and you begin slashing, finding it curious that such aggression would suddenly seep out given your treasure trove of stored sardines already purchased from other dealers. You take out a can, place it on the counter, and casually remove it from the box. Thus far, there is nothing remarkable. The box itself seems a bit generic. The can likewise. You grasp the ring. At this point you've eaten enough fine sardines to know that the very moment a seal is broken and the oil begins to pool to the surface, the quality of your product has proceeded to make itself known. You quickly note the texture, color, aroma of the oil. You fast realize that this can is no ordinary can. You realize this is an exceptional can, of which you only have nine left unopened, which you must now savor and frugally hide from guests. The color of the olive oil is a soft gold, slightly toasted and pungent in flavor. The sardine filet, skinless, boneless, is dense and meaty, with durable texture that is neither too firm nor too soft. The subtle smoke flavor is gentle enough to let the tastes of the olive oil and fish come through in a merry little dance upon your palate. You realize you may have just come upon the Holy Grail of sardines. It may just be the finest sardine you have ever eaten.
