Bratwurst Fresh Sausage Seasoning is a 25 lbs bulk seasoning blend designed for creating delicious bratwurst without M.S.G., making it a health-conscious choice for culinary enthusiasts.

## Description

Eldon's Bratwurst Seasoning produces an excellent sausage. Use bulk style in patties or for the best results stuff into 33-36MM natural hog casings. Seasons 25 lbs. of meat. No M.S.G. Ingredients: Salt, Spices, White Pepper, Coriander, Thyme, Nutmeg, Savory, Clove Extracts, BHA (0.98%), Propyl Gallate (0.30%) & Citric Acid added to protect flavor. Combine 25lbs. ground meat (85% lean to 15% fat), 2 cups ice water, seasoning & for a true Bratwurst taste add 2 whole eggs & 2/3 cup ice cold milk in large mixing tub; knead well. Stuff into 33-36mm hog casings; twist into 6" links or form into patties. Bake, broil, fry or grill in usual manner. Package & store remainder of sausage in freezer up to 1 year. For 1 lb: Use 2 rounded tsps. for each 1 lb. of meat. EKC-882

The flavor was a basic traditional brat herb with a perceptible saltiness and white pepper, but not overpowering. Some of the salt is likely from my grind (see below if you care).It wasn't the cheapest available, but it has enough herbs etc to give good flavor without them resorting to MSG. And you're going to pay for quality over cheating thru chemistry.I used 5 lbs of venison with 1.3 lbs of pork fatback in my grind, and used 1-5/8 ounces of the seasoning packet (so I was technically under-seasoning a bit). The fatback was salted so I rinsed it, but I'm sure it added to the overall saltiness of the final product.
