They come very dry but fresh, you can break easily with your hands. I like the quality of these sticks and plan to buy again instead of the Saigon cinnamon. I read that ceylon cinnamon is better for your health and your blood. I drink cinnamon and clove in my tea nearly everyday and I can taste the difference between this one and the super hard saigon cinnamon.
