Unfortunately I see many oils claiming high polyphenols in various wording formats which do not comply with any of the legal criteria and that makes me cautious. As regards the Odysea Kalamata pdo oil, My guess is that it is high in Polyphenols because it is fairly peppery with bitter notes, yet very balanced. Pepperiness and bitterness indicate higher Polyphenols. I recommend it. **Q: What's the difference between gold tin and the silver tin?** A: The golden Tin is PDO kalamata, from the south of the Peloponese in Mainland Greece.
