## Description

Review: Why in the world did I wait to purchase this beast?! - "Penny wise and pound foolish," my mom would have said. When I think of how much money I invested in quality ingredients, ending up with grainy chocolate on every attempt was so much more than frustrating. I probably spent more than the cost of this chocolate refiner in cocoa butter and cacao paste in my last few orders alone. (I'm stubborn, what can I say? I wouldn't stop trying other ways to solve the problem.) In the scheme of life, the universe, and everything, the Premier is not outrageously expensive. It doesn't take up a crazy amount of space. It turns grainy ingredients into silky smooth chocolate. It's a work-horse--you can leave it running for days if you want to. And best of all (the whole reason I started trying to make my own chocolate in the first place), it lets me keep tweaking my recipes until I get precisely the chocolate I've always wished I could find (soft, silky, very milky, and not-at-all sweet for me; and rich, sugar-free, very dark without sugar alcohols for my diabetic husband). Unless you've still got a 1974 dishwasher that runs, the Premier is bound to be louder than your dishwasher. Someone is fibbing about that, but that's about the only con to this beastie. (I've been plugging it in in the foyer so we can't hear it in our bedroom. There's a solution to every problem, if you're willing to think outside the box.) If you think you might like to try a chocolate refiner/melanger, you probably should. I highly recommend. I'm sorry I waited so long.
Review: Right Equipment or the Job - My first batch of chocolate I tried a Cuisinart that did ok, but it left some grit. I realized I needed the right equipment to make chocolate. The Melanger was the right thing at the right price range for Hobby chocolate. I started with 2.5 lbs of Milk Chocolate, batch 1 ran or 22.5 hrs batch 2 ran or 48hrs. the Melanger Stood up to the test and ran smoothly for booth batches. Set up was easy. I ran vegetable oil and rice for two hours as directed washed it with soap and water and set it in a warm oven to dry it completely before starting my first batch. Mouth feel for my chocolate is smooth and creamy te way it should be. I will take my other chocolate and continue couching and refining it in the Melanger now.

**Q: What is the shelf life of the stones?  Are they granite stones?  Anyone measured temperature of ~2lbs chocolate in melanger?**
A: Shelf life(usually applies to food products) of stones doesn't make sense. The stones appear to be a hard durable granite, or granite like stone. I've used mine for the last three years, running the 2 lb batches for 8-10 hours continuously reaching temperatures around 110-120F. The first key to melanger's long running life is to grind your roasted cacao nib down as fine as possible in another machine, i.e. champion juicer, food processor, etc. before putting it into the melanger. Also, the second key is pre-heating your fine nib and cocoa butter up to a temperature of 100-120F or so, when you start to run melanger. When everything is warm, including the machine bowl, the refining/melanging runs so much smoother.  You can use a hair blower to provide additional heat, if necess.

**Q: Is this the same as premier wonder table top wet grinder? are there any differences?**
A: This model is almost the same - but it has been upgraded by Premier to be able to withstand chocolate grinding over a period of multiple days. The regular table top wet grinder has more plastic in it. You can actually buy a kit to upgrade the wonder table top wet grinder to the chocolate refiner model - it's about $100 worth of parts.

**Q: For small batch chocolate makers: How does this machine differ from the Premier wet grinder (with blue middle)?**
A: The rice grinders (blue middle) are designed to run for a few hours a week. The gears and internal transmission components wear out quickly on the rice grinders when used for extended period of time. The Chocolate refiners use completely different internal components. The belts are designed to transfer higher load and the bearings and gears are designed to work for days at a time and not for a few hours. The components are more durable and will last longer and transfer more power (which is required to refine chocolate)

The melanger arrived quickly and promptly. No issues whatsoever with ordering or shipping. It was packaged very well. The machine is very simple to assemble and operate; however, determining what type of cacao to put in the machine and how long to run it for is a whole other issue to get the chocolate you are making to turn out the way you like it. The machine has pretty much been running non-stop since purchased about three weeks ago. No issues have surfaced and it has performed flawlessly. It does take practice to wipe the excess chocolate off the rollers. I found using a spatula to scrape the rollers and then wipe that on the side of the melanger - and repeat - works well. When finished cleaning the rollers, it's convenient to set it on top of the upside down lid. Very happy with the product and would definitely buy another one if the need arises.
