Review: Good Food, Good Price, Long-Lasting - I am not a prepper in the sense that I have a bug-out bag packed with essentials that I can take with me when I escape into the forest, where I have buried caches. I'm nearly 73 years old, and I'd run out of Levothyroxine within a month anyhow, so I don't do that. However, I have always liked to have enough food on hand that I could survive for a time in the event that something goes terribly wrong. When I was younger, that might have involved losing a job, but today, it might be an interruption in services for one reason or another. However, since I don't really believe that this is likely to occur, I am not buying a ton of survival food, particularly not of the type that I wouldn't eat unless I were starving to death. I mostly buy stuff that will keep without refrigeration and that I would (and do) eat anyway. Dried soup mixes are perfect for this. I like soup and don't hide this stuff in my attic to await an emergency. Rather, I eat it regularly and buy more, so I have a supply of it. This is good soup, and it's far more affordable than buying all of these ingredients fresh, much of which would probably spoil or go to waste before it was eaten. The ingredient list does not look like something put together in a chemistry lab, as is the case with some of the stuff you might find in a can. The ingredients are as follows: carrot flakes, chopped white onions, tomato flakes, peas, celery flakes, green bell peppers, green beans, and parsley flakes. It is non-GMO; if it matters, it is also kosher and vegetarian vegan. Made into soup, it tastes pretty good as is. Simply add water, bring it to a boil, and simmer. Since I am neither a vegetarian nor a vegan, I often add chicken, kielbasa, or another protein, and I usually add a bouillon cube to it for added taste. As said, however, it tastes pretty good without the additions. It has a two-year expiration date, but I can't imagine why it wouldn't be edible long after that date. As for the cancer warning, pretty much everything causes cancer in California, so I wouldn't worry about that. It's probably a reference to the plastic container; don't eat that.

**Q: Does this product contain Bell Pepper? (My family is allergic)**
A: Yes, the vegetable soup mix has bell pepper in it.  The ingredients are:  Carrots, Onion, Tomatoes, Peas, Celery, Green Bell Pepper, Green Beans, and Parsley.

**Q: What kind of nutrition can I expect from this? I don't know how dehydrating vegetables affects their vitamin/mineral content.**
A: Fresh is best for sure, but dried veggies lose very little of their nutritional value when they go thru the dehydration process. They retain most of the minerals, most of the vitamin A and some of the B-vitamins. What they lose are the volatile nutrients like Vitamin C and beta carotene. You can, however, minimize this loss by dehydrating at lower temperatures or pre-treating the food with chemicals like sulfur dioxide. You also can add back some vitamin C by dipping the food in citrus juice or citric acid.

PACKABLE: They are lightweight and take up a fraction of the size of their fresh counterparts. You can place them at the bottom of your food bag and not worry about them rotting or bruising while you walk.

EASY PREP: Similar to other dried foods, dehydrated vegetables are convenient for backpacking. They are ready-to-eat so you don't have to spend time cutting or chopping them. Just pull them out of the bag and drop them in your food. You also don't have to worry about spoilage even when you are on a long stretch between resupplies.

I bought this for a friend who is not a cook but needed some way to feed herself while undergoing some illness and surgery recovery. I bought one for myself as well and I have to say the first time I made it, I did not cook it long enough. The second time I made it I put it in the instant pot, cooked it and let it natural pressure release. Popped it in the fridge for that week's meals and it was absolutely delicious. So for me it really just needs extra rehydration time and some seasoning, because it doesn't have a lot of seasoning on its own. I will definitely buy them again because I I'm tired of throwing away vegetables when I don't get around to making soup as planned. It's great to have them available right when I want them.
