I am the only person in my house hold who likes/makes miso soup.** A: Food safety engineers will love this: When we lived in Japan and had a miso sales man come to our door and give his pitch for his miso, he told me that it grows mold, just mix it in. He said I could store it at room temp. When I was a little girl and my grandmother made miso from scratch i remember mold growing on it! Ha ha. All true. So we ended up buying that miso that the guy sold and it didn't grow mold that I could see. It was a large tub so I couldn't store it in the fridge b/c of space economy. Now that we live in the States, I store my miso in the fridge and don't at all worry about it going bad of years! What I love about miso is that it is one of the few ways one can eat soybeans more safely with recent research. Soy has different concerns for health troubles. But fermented soy is totally different. Tempeh (Indonesian) is also fermented. So your miso in your fridge will last long! **Q: There is not an ingredient list on this page. Can you list the ingredients for me?
