I bake often, and I buy the best flower like mom taught, and only real vanilla, same, but cornmeal was always the quaker guy cardboard round container. Wow, this cornmeal made my tried and true good recipe, and I mean really good (yankee style, sorry South) really great, completely different taste, texture, I can't say enough about it. The texture is not powdery fine; but also not coarse....just right for making a delicious flavorful cornbread w/ texture. Grocery stores tend to carry just the yellow cornmeal which I feel is bland. The roasted Brinsers is full-bodied and bold. I use it for cornbread (which my 9 year-old grandson absolutely loves enough to ask for it as a treat), muffins, and an excellent cornmeal bread recipe that contains zucchini, cheese, and onion. My husband and I enjoy this for lunch.
