We do this a lot. I rinse it, break it into smaller pieces and throw it into the pot of water thats heating for the noodles. They will absorb water so I usually add an extra 1/2-1 cup of water than what the directions say. Usually by the time, the water boils and noodles are cooked, so is the bean curd. Every once in awhile you'll get a piece thats a bit compressed that takes longer to get soft but I like the chewiness of those anyway. I love this stuff for "jugged up" ramen, especially when I don't have other handy sources of protein to throw in. **Q: What is the sodium content per serving?** A: My understanding is that dried beancurd is made by simply boiling the soaked soy beans in water, so it should have no sodium content.
