**Q: Where does the wheat to make this flour come from?**
A: In the product description it says the wheat is from Parma, Italy, the most important cereal-growing region of Northern Italy.   Personally, I would not want flour made from wheat grown in the second most important cereal-growing region of Northern Italy.   This flour is certified organic, Kosher and Halal.

**Q: Is this flour used to make sourdough bread?**
A: 00 Flours have less protein in them than most bread flours, but I think this is on the higher side, and will be suitable. You wouldn't want to use a lower protein flour for long ferments with bread and sourdough.

**Q: Is this Italian grown wheat, or is it imported American wheat, milled in Italy?**
A: On the bag it talks about the Grassi family who has milled the wheat for many years and how they use no GMOs or pesticides.  It says they have improved their processes over time but there is no mention of the wheat being grown in America. I am figuring it is Italian grown.

**Q: What is the protein of this flour?**
A: I’m so sorry but I have no idea. It worked great for my needs. (Pizza dough).

So I have a gluten intolerance and went out to a Italian restaurant with some friends. The server said I can eat their pizza dough as long as I am not celiac. She said its a soft wheat flour they get from Italy. I ate and didn't have a issue. I decided to try this flour and I made a apple pie let me tell you it had been so long since I worked with wheat flour the dough was perfect rolled out beautifully and was flakey and delish! Gluten free dough is nothing like that.. at least for me makes me not want to cook anything lol. Anyway the pie was fabulous and I had no reaction. I then made cinnamon rolls and pizza dough and had no reactions. I am so happy I have found this. I am slowing down a little bit on cooking with it because I don't want to eat it all the time and work up to where I do have a reaction from it. I don't know if that is possible but I don't want to take the chance and not be able to eat it. I have just ordered more so I have it on hand if needed. It was shipped fast and as described.
