## Description

Baker's dry milk makes better bread. High-heat treated dry milk is a nonfat milk product but it has been produced at higher temperatures to destroy certain enzymes naturally found in milk. These enzymes in milk will degrade the gluten structure in bread dough. Because of this, commercial bakeries nearly always use high-heat treated dry milk in their yeasted products. Important note: This is not instant dry milk which is not high heat treated and it is not intended for table use. The taste is a little different and it will not dissolve as readily in water. It dissolves in the bread as you knead the dough. We add this or dry buttermilk to most of our bread mixes. It really improves the flavor of bread. We love this product. Ingredients: Nonfat dry milk. This product may contain traces of soy, eggs, wheat or nuts. This heat-treated dry milk, will make your products lighter with a better crumb.

**Q: Why is the shipping price higher than the actual item? $7.95 for shipping? $16 for 12 ounces of dry milk?**
A: The seller sets the shipping price. They are probably paying for over 1 lb. shipping costs. Also sellers will often lower the price of the product so more people will buy while not paying any attention to the shipping charge. If you look at "Amazon's Choice" it is prime and is only a little less with shipping.

**Q: Where is this dry milk made or produced?**
A: It doesn't say on the package, nor on their web site.  You may have to contact Prepared Pantry if they don't respond to this question.

**Q: Can this be used for making hot cocoa? King Arthur’s recipe calls for dry milk powder, but their brand is about 300% higher cost...**
A: To me this dry milk is best used in baking.  It is almost impossible to dissolve in water.  I would suggest using Carnation NonFat Dry Milk.  Hope this helped.

**Q: Is there an expiry date?**
A: I purchased mine several months ago. It has a BEST By date of Oct. 2020.
