Cook covered at a low simmer for about 30-40 minutes till the beans are soft but not mushy. Check frequently and add a bit of cold water if they get too dry. I checked the invoice from our supplier, and it lists the country of origin as the USA. If you look at the lot number, it should say "US" in the middle of it. This indicates where the beans were grown. We use this indicator instead of a country of origin statement. Unfortunately, I do not know if they were farmed vegan.
