I usually put masking tape over utensil openings to keep heat from escaping. It won't matter after service starts. Purpose of this is to have many dishes hot at the time of guests arrival, just sit down to eat and don't worry about running to and from stove. I own five servers, can accommodate a dinner for 40 guests. **Q: Ideas for transporting warm food across town in this?** A: I wouldn’t. It’s not sturdy enough.
