Once the curds have drained the cheese forms quite a solid mass that holds together nicely. You just turn the mold upside down over a plate - tap the base lightly and stretch the sides out with your fingers if you need to. The drained cheese comes away from the basket. Don't turn it out before it is drained well or it will break. See the attached video where I am taking a square ricotta cheese from the draining basket. If I remember correctly, brie requires frequent flipping; the molds in this set are not cylindrical, and the sides are not smooth which would make flipping a problem. That said, these are best for fresh cheese like queso fresco, ricotta, halloumi... **Q: Do you need to put a weight on top after putting the curds in these molds?** A: Yes you can add a follower to these to weigh down the curds. It depends on the cheese you're making. For a small Ricotta mold you just let gravity do the job for you. If you're making Feta cheese in the large square cheese mold then you might have wrapped the curds in cotton cheesecloth and you can put a small plate on top and sit a weight on it to press the curds. Most of the cheeses you make with these molds will just be gravity pressed though - just simple fresh queso or quark type cheeses. **Q: how am i to "press" the curds into the mold without a top press plate or something like that to go on top? is there at least 1 top cap that fits all?** A: Thank you for your question. Each cheese draining mold in the set is a different size. They are designed for rapid draining of soft cheeses and need very little weight applied to them to form a cheese. If you do want to add weight for extra firm feta or paneer, use a small clean plate or jar lid as a follower and sit your weights on this. I hope that helps.
