**Q: I am looking to buy this for a Christmas present, what is the shelf life of the product, so I know when it would be advisable to order**
A: Let me answer this question in general. Cacio di Bosco hard cheese so if you get this vacuum pack (which will do with all our mail orders) you can hold this cheese in refrigerator (not freezer) may be even till Christmas after Christmas.  Hard cheeses in general became more flavorful with time. Fresh cheeses (such as ricotta or fresh mozzarella), Bries, Camemberts will expired at their expiration date.
