I used to be a fan of heavy kitchen equipment, but now I realize knives should be light when cutting through soft things. The blade is incredible, it stays sharp after many uses! I use it to cut boneless meat, hard root vegetables, and soft vegetables like green onions. A big step up from my dollar store knife.The secret to everlasting sharpness? It is CARBON stainless steel, not REGULAR shiny stainless steel. Carbon stays sharp and is stronger, but more susceptible to rust if you leave it in water, but don't worry. I just let my wet knife air dry dripping wet and no harm done! Pros and chefs use carbon steel. This thing just glides right through everything I throw at it.Also, I love that the different knives are color coded. It really does make it much easier to grab the blade I need with little more than a sidelong glance into the cutlery drawer.On top of it's functionality, there's the price point. Nigh impossible to beat. Even if the blade wears out sooner than more expensive blades, I will not be miffed when I have to buy a replacement. You simply cannot ask for more for the price.
