I'm using the pretty 1.75L New Amsterdam gin bottles for my secondary kombucha ferments and wanted to see if that particular cap would fit them for a tighter seal and so I don't have to use the ratty old aluminum screw-ons, thinking if it did I could order a bulk package of the polycaps. I knew I'd use the jug and the airlock at any rate, and the price was right, so I bought it. The bad news is the cap doesn't work with my New Amsterdam bottles (if anyone has found one that does, please let me know!), but that saved me from chancing ordering a bag of the caps that I then wouldn't have been able to use. Obviously, I know nothing about fermenting into wine but my two bottles for ginger bugg are too small.** A: To be honest I had to google what you were talking about. It should work fine for your fermented ginger beer. Be warned though. I was bait and switched when I ordered this bottle. What I was sent was a gallon wide mouth jar with a plastic lid drilled for an airlock(which they did include). From what I read I think your going to need something with a wide open top anyway. Good luck and maybe consider a "fermonster" jar. They are made quite well and have a built in airlock that's easy to clean. **Q: Can I store/age wine with the poly seal lid?** A: Yes that what its made for. After the initial mashing 4 lbs of fruit pulp in cheese cloth and adding yeast and sugar in wine bucket (kit available on Amazon), let sit loosely sealed with cork vent shown for 3 days. The next step is to age for 3 weeks in this jar, siphon off solids into a second jar pictured and store in these jars for 2 - 3 months!!! Pictured is a one gallon batch of apple wine. (Wine made from store bought apple juice, champagne yeast, yeast nutrient, and table sugar) It turned out great and fermented in about five days. I've seen some reviews saying the bung was incorrect. Mine came with a 6.5# pre-drilled rubber bung and a single piece airlock. The bung fit perfectly and didn't pop out because I know how to properly use them. If yours is popping out, its due to either the bung or the inside of the jug being wet or both. You need to dry them off. If the bung doesn't fit, ensure it's a 6.5# (sometimes written as a 65) and not a #6 or #7. Also, you can wrap a string or rubberband around the airlock and the handle to keep the bung in place if it wants to keep popping out. Pictured is a three piece airlock I bought separately. I prefer the 3-piece for easy of cleaning.
