Never had to top up when doing this. Insulation works well so the sous vide doesn't need to work that hard to maintain temperature (see pic) Last Christmas I used it for our turkey. It fit ... just. Had to scoop out some water when adding the breast after 12h, but it all cooked just fine. If you're planning a lot of protein then you could possibly run out of space. Should fit up to 6x 2" Steaks. I'll often do 2Kg of beef chuck or pork shoulder with no problem. Tip.
