It has trouble with anything grainy. Cold cut ham would work fine. **Q: Can a good food processor cut long & very thin pieces of hard root vegetables** A: I have had this slicer since February 2019, I have thirty years in food service. Primary used for slicing cheese, green onion, standard onion and radishes. Hard root vegetables such as carrots will put heavy stress on a thin blade. It is also important to use a straight up and down motion to just cut cheese. If the blade is pushed slightly to the left it will hit the base and can damage the blade as well. This slicer is better than any wire cheese cutter I have ever used. Light duty not heavy duty... **Q: What is the board part made of? And how sturdy is the whole thing? How well does it hold up?** A: The board is hard plastic. Well I like it. To me its sturdy enough. I like it how it has a measurement on it & I've cut meat's, cheese's & fruit's on it with no problem.
