I am a big fan of Chicago Metallic and USA Pan, both of whom make wonderful steel pans with a hard anodized aluminum coating. Every now and then I get to buy new ones because someone ran them through the dishwasher. The problem is that dishwasher detergent is a caustic that wreaks havoc on aluminum. P.S. I noticed Joe's spell checker screwed up his post - I think he was suggesting "Barkeeper's Friend". Good stuff if you need it, but if you clean as you cook and use the aluminum coated pans you are unlikely to need it that often. **Q: Will magnets stick to these?** A: Magnets will not stick to these baking sheets. I love them! **Q: What gauge? (Please do not answer if you do not know)** A: the pans are not labelled with the gauge but the Vollrath website states that the Volrath 5303 is 18 gauge, I find these very heavy, long lasting, east cleaning, do not buckle, I sure recommend **Q: Do they warp at 425 for 30 minutes? I have to have pans that don’t warp.** A: I have these pans in 1/2,1/4 and 1/8 sheet size. These are the only pans I’ve found that will handle these types of temps without any warping. I frequently use these pans to bark a roast at 500 for 20 min.
