Once the charcoal is fully lit (less than 10 minutes), it served excellently for searing meat after being cooked sous vide. Cooks illustrated said that the capacity is too small, but I have not had that issue when searing my meat; I have not tried to use it to cook traditionally on a charcoal grill. With the fan turned up only a little bit, the heat is so intense that I cannot put my hand above the chimney for even one second.
